Cake Box Cookies

Cake Box Cookies

1 box white cake mix
1/3 c. oil
2 eggs
Mix together till moistened. Use a tablespoon and drip onto parchment lined cookie sheet. Flatten slightly. Bake at 350ยบ for 6-8 minutes or until the edges begin to show a little brown.
They will firm up when they are cool.
Makes 1½ dozen cookies

Frosting
2 c. confectioners sugar
¼ c. shortening
1 tsp. vanilla
enough milk to make it spreading consistency
Cream till smooth and stiff.

I have also tried chocolate cake mix with a 1 cup of peanut butter add to the recipe. It came out really good.

Twins????


Yesterday while collecting eggs I found this huge egg in the coop. If you notice the brown egg is a lot bigger then the green one. That is because it has a double yolk in it...It is pretty cool to find one. They aren't very common so my kids love finding it. Grant comment was " boy that had to hurt coming out!"


Waffle Mix!

So I bought waffle mix at the Cannery this month....It totally rocks! The cool thing about it that it can either be for pancakes or waffles. We made waffles this morning and I got eight Belgian Waffles out of the mix. I usually don't use mixes but I was very impress with it. So if you get the chance to purchase it from the cannery the $13.50 for 4lbs. of it is totally worth it!

Crockpot Spaghetti Sauce

So I made spaghetti tonight for dinner.
I made the sauce ahead of time in the crock pot so all I had to do was boil noodles.

Sauce:
2 15oz cans of Crushed Tomatoes
1 can of diced Tomatoes
1 can of Tomatoe Sauce
1 lb of cooked ground Turkey
3 tbsp of Italian Seasoning
For a sweet sauce add 2 tbsp of Sugar

Cook in the crock pot on high for 2hours or 4-5 hours on low.
So this makes allot of sauce so this isn't for the tiny crock pot.

We are also serving sourdough garlic bread and salad to go with our meal.

Easter Bonnets


This year I made the girls easter bonnets instead of buying them dresses. That and they are different sizes it was to hard to find matching ones. So I figured they could use the hats to play in all year long. So I got the hats and flip flops at the dollar store.....with the magic of a glue gun this is what I came up with.

Enchiladas

Well I made cheese enchiladas yesterday....They were fabulous!

Cheese filling:

1 cup cottage cheese
1 container of Sour Cream
1 8 oz package of cheese
1/2 c. dried onions
1 can of green chilies

Sauce:
15 oz can of green chili enchilada sauce
1 can cream of chicken soup{condensed}

1 doz. flour tortillas
1 8oz. package of cheese{for the top}

All I did was pour a little sauce over the bottom of the pan.Then I put some of the cheese filling in a tortilla and wrapped it. Once you fill your pan add more sauce over the top and sprinkle cheese. I serve beans on the side along with a simple salad!

It was so good...There weren't any leftovers!

Tonight I am making spaghetti for dinner. I will post more about that tomorrow.

Emergency Quick Clean....

This is a quick check list that I got off the internet....It has helped me before not recently but in the past. I am actually going to be doing this today! Who wants to join me?

Emergency Quick Clean - in nine simple steps
1. Go into your kitchen, and wash your dishes. If you have a dishwasher, then use it. It's one of your many "servants". ;-)
2. Go to every sink in your house, and spray them all down with spray cleaner, and give them a quick wipe down with a paper towel.
3. Depending on the amount of mess in your house, this step may be the longest one for you... Go through every room in your house, and throw away any trash, and put away things that have wandered away from their homes.
4. The hard part is over. :-) Grab a washcloth and a spray cleaner, and wipe down your kitchen/dining room table(s), kitchen counters, and bathroom counters. This is also a good time to clean your TV and computer screens, and bathroom mirrors.
5. Toilet time. Squirt in some toilet cleaner, and let it sit, while you follow the next step. You'll get back to the toilets later.
6. Almost done! Grab your broom, and do a quick sweep of your kitchen and bathrooms. This is a quick sweep - this means that you just sweep the middles of the floors. Don't worry about moving chairs, etc, just sweep around them.
7. Get back to those toilets. Use the toilet brush, and give them a quick scrub. Before you flush the toilet, use a wad of toilet paper to wipe the back and under the seat. Then, flush and be done with the toilets. :-)
8. Time to spot mop. Turn on the hot water in your kitchen sink, get your mop wet, and then look at the floor for messy spots, and mop over each messy spot. Remember, this is an Emergency Quick Clean, so we're not mopping the whole floor, just the visibly dirty spots. Now do this in your bathrooms as well.
9. Quick Vacuum time... Vacuum your living room and dining room . Focus on the middles. Don't worry about the edges, or underfurniture, etc. All done! :-) past!

15th of April $$$$$$

I have had my taxes done for over a month now....But I am sending out my check to the great state of AZ on the tax day. You would think that with 5 kids I wouldn't have to pay??? But of course thanks to ex-gov. Janet Nap. and her screwing the budget. The state gets some of my hard earned monies. This just chaps my hide every year whoever thought of April 15Th for taxes should have been shot. Saved us all tax paying, lawbiding citizen a lot of aggravation in years to come. Happy Tax day! Just think after today.....You won't have to do it for the next 365 days! Whoo Hoo!!!!

Happy Easter!


We had a great day and lots of candy and looking for colored eggs. We had a great time at church and remembering the real reason that we celebrate Easter. I am very thankful for Jesus Christ and his sacrifice for me. I am thankful that he made it possible that we can live with our Heavenly Father again. I am thankful to know that my family is forever and Jesus Christ made it possible that we can live with him again. Happy Easter!

Easter buckets....

I found these popcorn buckets at a discount store of 5 for $1.00 so snatched them up!
This was our craft project for today....we made our own Easter buckets for less then a dollar each.

As you can tell the little kiddos were so happy about the project. I think Mathew and Ella enjoyed it the most.
P.S. I usually by buckets but I refused to pay $1.50 to $2.50 for baskets for the kids....that and last time I did they were broken by the end of summer!
But overall it was a complete success with the kids and I had fun too!!!!



Crocheting 101

This is Grant attempt of crocheting...he got bored one afternoon so this is his first washcloth maybe his last!
I tried to make a potholder it came out the size of a coaster! Pretty funny if you saw the midget potholder.

This was the very first attempted for me when it came to crocheting....my potholder turned in to a scripture bag for Mathew. I will post what it looks like in the end.
The reason why I dicided to take up crocheting is because I needed a hobby. I am not successful at scrapbooking it sress me out. But I am really enjoying learning how to do it. Since baseball season is in full swing here.....It is the perfect take it with you hobby!

Tighting the Belt!

Well in the hopes to stay on a budget I created a menu for 2 weeks I only spent $152.50 on groceries. That included food and toiletries & diapers so I think I did really well. This should last us 2 week feeding 6 people. On a side note: I didn't have to buy any eggs since our chicken have started to lay eggs. Right now we are getting 4 eggs and that should increase to almost a dozen a day when they start laying. If anyone needs recipes I can post them also.
