Enchiladas

Well I made cheese enchiladas yesterday....They were fabulous!

Cheese filling:

1 cup cottage cheese
1 container of Sour Cream
1 8 oz package of cheese
1/2 c. dried onions
1 can of green chilies

Sauce:
15 oz can of green chili enchilada sauce
1 can cream of chicken soup{condensed}

1 doz. flour tortillas
1 8oz. package of cheese{for the top}

All I did was pour a little sauce over the bottom of the pan.Then I put some of the cheese filling in a tortilla and wrapped it. Once you fill your pan add more sauce over the top and sprinkle cheese. I serve beans on the side along with a simple salad!

It was so good...There weren't any leftovers!

Tonight I am making spaghetti for dinner. I will post more about that tomorrow.

Those sound yummy! I'm going to have to try it! What kind of beans do you serve?

I took a few cans of pinto beans and did some doctoring up. I add roasted green chilies and diced tomatoes to it. Then I baked them in the oven for 30 min. when I was cooking the enchiladas!

Everybody really like them.
