EZ Wheat Bread recipe
1 1/4 cup warm water
1 Tbsp active dry yeast
1/4 cup honey or 1/3 cup sugar
2 3/4 cups whole wheat flour (or whatever combination white/wheat you like I use 100% hard white wheat)
1/4 cup wheat gluten
1 tsp salt
2 Tbsp nonfat non instant dry milk
1 Tbsp butter/margarine/oil
1 Tbsp vinegar1/4 cup potato flakes (NOT potato pearls)
Mix ingredients in order listed in mixing bowl of mixer with dough hook attachment (like kitchen-aid) for 12-15 minutes. Let rise until double, 1- 1 1/2 hours. Punch down, and shape into loaf or rolls. Let rise again until double and bake 375 degrees for 20-30 minutes until golden brown and sounds hollow when lightly tapped.If you are making this recipe in a bread machine, follow your bread machine’s directions for wheat or whole grain selection and add the ingredients in the order listed for their recommendations. (only one loaf will fit in a bread maker)
If using a Bosch cut the mix time down to 6 minutes!

New Recipe
Trying a new recipe tonight:
Spicy Chicken and Sweet Potato Stew
Ingredients
1 teaspoon olive oil
1 onion, chopped
4 cloves garlic, minced
1 pound sweet potato, peeled and cubed
1 orange bell pepper, seeded and cubed
1 pound cooked chicken breast, cubed
1 (28 ounce) can diced tomatoes
2 cups water
1 teaspoon salt
2 tablespoons chili powder
1 teaspoon ground cumin
1 teaspoon dried oregano
1 teaspoon cocoa powder
1/4 teaspoon ground cinnamon
1/4 teaspoon red pepper flakes
1 1/2 tablespoons all-purpose flour
2 tablespoons water
1 cup frozen corn
1 (16 ounce) can kidney beans, rinsed and drained
1/2 cup chopped fresh cilantro
Directions
1. Heat olive oil in a large pot over medium heat. Stir in onion and garlic; cook and stir until the onion has softened and turned translucent, about 5 minutes. Stir in sweet potato, bell pepper, chicken, tomatoes, and 2 cups of water. Season with salt, chili powder, cumin, oregano, cocoa powder, cinnamon, and red pepper flakes. Increase heat to medium-high and bring to a boil. Dissolve flour in 2 tablespoons water, and stir in to boiling stew. Reduce heat to medium-low, cover, and simmer until the potatoes are tender but not mushy, 10 to 20 minutes. Stir the stew occasionally to keep it from sticking.
2. Once the potatoes are done, stir in corn and kidney beans. Cook a few minutes until hot, then stir in cilantro before serving.
The reason I choose this recipe is what I have on hand at home. So I will let you know what the verdict is tomorrow!

Corn Chowder
A few weeks ago I tried a totally new recipe and it was a hit at our house.
2 cups of celery
1 cup onion
sauteed in butter
Then add in 5 medium diced and peeled potatoes
Pour in 2 or 3 cup of water over the veggies until they are just submerged in water
Boil until potatoes are very soft
Then add in 2 chicken bouillon cubes after they are dissolved.
Add in 1 qt of half and half
1 can of cream of corn
2 can of regular corn
1/2 lb of cooked bacon
If your soup isn't very thick just mix 1 c. of water and 1c. of Flour together until it makes a paste and then pour it in the soup.....Within just a few minutes your soup will totally be thick. If it is too thick just add in some regular milk to get the right consistency.
I am not sure of the servings but it feed 7 with leftovers for seconds!

Homemade Eggnog---
For Family Home Evening, last night Forrest made homemade eggnog for dessert....It was so good. We had it warm just after he finished making it. That was Awesome....But this morning I had some of the leftover just out of the fridge! It was even better than last night. So here is the recipe try it. It was very easy to make.
HOLIDAY EGGNOG
2 large eggs
1 1/2 cups sugar
1/2 teaspoon salt
2 quarts milk
2 tablespoons vanilla extract
2 cups heavy whipping cream
ground nutmeg
In heavy 4-quart saucepan, with wire whisk, beat eggs, sugar, and salt until blended. Gradually stir in 1 quart milk and cook over low heat, stirring constantly, until mixture thickens and coats the back of a spoon well, about 25 minutes (mixture should be about 170 F to 175 F. but do not boil or it will curdle).Pour custard into large bowl; stir in vanilla extract, 1 teaspoon ground nutmeg, and remaining milk. Cover and refrigerate until well chilled, about 3 hours.
To serve, in small bowl, with mixer at medium speed, beat heavy or whipping cream until soft peaks form. with wire whisk, gently fold whipped cream into custard mixture.
Pour eggnog into chilled 5-quart punch bowl; sprinkle with ground nutmeg.
Serving Size: 16.

Meatloaf
Well I found a new recipe for meatloaf a few weeks ago....It is a total hit with the family. So here it goes!
Meatloaf Recipe
2 pounds ground beef
1 box of stove top stuffing mix
2 eggs
1 cup of BBQ Sauce( whatever is your favorite)
Mix it all together and put it in a 9x13 pan in the shape of a loaf and bake at 350 for 1 hour.
For the side we always have either mashed potatoes or baked potatoes. If it is baked potatoes we put them in at the same it w/ the meatloaf and set the timer and walk away!

New recipe....
Today is cloud w/ the chance of rain....It feels like a day to cook. So I am trying a new recipe for Peanut Butter Cookies today!!! It comes from NieNie blog: (It is on the sidebar just under I read NieNie)
Peanut
Butter Cookies
INGREDIENTS
1 cup unsalted butter
1 cup crunchy peanut butter
1 cup white sugar
1 cup packed brown sugar
2 eggs
2 1/2 cups all-purpose flour
1 teaspoon baking powder
1/2 teaspoon salt
1 1/2 teaspoons baking soda
Butter Cookies

This lady recipe was made in a kitchen-aid mixer If you are using a Bosch cut the mixing time in half.

Snickerdoodles
Well after searching for new recipes for Snickerdoodles....I think I have found it. I did have to add a few things to it! But overall I give it 4****s!
SNICKER DOODLES
1 cup butter
1 1/2 cups sugar
2 eggs
2 3/4 cups flour
2 tsp. cream of tartar
1 tsp. baking soda
1/4 tsp. salt
1tsp. vanilla
2 tbsp. milk
Mix butter, sugar and eggs. Add remaining ingredients. Roll into balls the size of walnuts. Roll in a mixture of 2 tbsp. sugar and 2 tsp. cinnamon. Bake on ungreased cookie sheet for 8-10 minutes in 400 degree oven.

Cake Box Cookies
Cake Box Cookies
1 box white cake mix
1/3 c. oil
2 eggs
Mix together till moistened. Use a tablespoon and drip onto parchment lined cookie sheet. Flatten slightly. Bake at 350ยบ for 6-8 minutes or until the edges begin to show a little brown.
They will firm up when they are cool.
Makes 1½ dozen cookies
Frosting
2 c. confectioners sugar
¼ c. shortening
1 tsp. vanilla
enough milk to make it spreading consistency
Cream till smooth and stiff.
I have also tried chocolate cake mix with a 1 cup of peanut butter add to the recipe. It came out really good.
Enjoy!!!

Crockpot Spaghetti Sauce
So I made spaghetti tonight for dinner.
I made the sauce ahead of time in the crock pot so all I had to do was boil noodles.
Sauce:
2 15oz cans of Crushed Tomatoes
1 can of diced Tomatoes
1 can of Tomatoe Sauce
1 lb of cooked ground Turkey
3 tbsp of Italian Seasoning
For a sweet sauce add 2 tbsp of Sugar
Cook in the crock pot on high for 2hours or 4-5 hours on low.
So this makes allot of sauce so this isn't for the tiny crock pot.
We are also serving sourdough garlic bread and salad to go with our meal.
Enjoy!

Well I made cheese enchiladas yesterday....They were fabulous!
Cheese filling:
1 cup cottage cheese
1 container of Sour Cream
1 8 oz package of cheese
1/2 c. dried onions
1 can of green chilies
Sauce:
15 oz can of green chili enchilada sauce
1 can cream of chicken soup{condensed}
1 doz. flour tortillas
1 8oz. package of cheese{for the top}
All I did was pour a little sauce over the bottom of the pan.Then I put some of the cheese filling in a tortilla and wrapped it. Once you fill your pan add more sauce over the top and sprinkle cheese. I serve beans on the side along with a simple salad!
It was so good...There weren't any leftovers!
